Manufacturer and brand history

One day Michele Tait (creator of the project), walking through the vineyards of one of his customers in Montespertoli (FI), Tuscany, Italy, noticed strange shells on the ground. He was immediately struck by the peculiarities of this territory to such an extent that he had what is known in the jargon as " the enlightenment " to create a totally de-coloured wine that for the first time was linked to a territory (it was 2016). Here, in Florentine Chianti, this territory is still little known and for this reason precious and untouched. It is Chianti Montespertoli nestled between Florence, San Gimignano and Siena. Here it is the slow rhythm of nature that dictates time, from the colours of the seasons to the intense perfumes and aromas of the wines. The land rises and falls with its gentle hills, steep hillocks and wide valleys where the sun and wind have tended and nurtured the vines for centuries. But in addition to the favourable climate and exposure of the land, the uniqueness of its soil is a gift from the sea that bathed these lands millennia ago.

Mo.od is the first product to be produced with a maximum number of bottles depending on the vintage (8000 for 2021), which means entering powerfully into the logic of quality wine.

Production process and dealcoholisation method

The vinification process, overseen by oenologist CIARLA Valentino and TAIT Michele, is carried out by fermenting the Sangiovese in cement, separately from the remaining wines in steel barrels, blending them after malolactic fermentation.
The experience of Princess srl, of which Michele TAIT is the owner and leading company in quality dealcolation, completed the work, lowering the alcohol content to 0.0% and giving the world, for the first time, what we think of as a true non-alcoholic wine.
The dealcolation process used for Mo.od, entirely Italian and developed by Michele TAIT himself, is the most advanced in the world, as it succeeds in separating the alcohol from the wine without losing the vegetable water normally present in it.
Mo.od offers a real alternative for a variety of reasons, ranging from the impossibility of drinking alcohol, religious reasons (as it is Halal certified), to health and diet reasons, as it contains only 38kJ / 9kcal per 100mL.
