製造工程と脱アルコール方法

Developed in the 1970s and launched in 1979, Clausthaler was the world's first Non-Alcoholic beer and its creation is the result of an innovative brewing process that prevents the formation of alcohol. Clausthaler is the best-known beer produced at the Binding-Brauerei Brewery (DE).
Clausthaler is made by a patented process that ensures that little fermentable maltose is produced. Clausthaler Premium is then bottom-fermented with especially cultured, but otherwise normal beer yeast. Because there is little maltose available in the wort the yeast can only produce a tiny amount of alcohol. This process not only brews a tasty Non-Alcoholic beer but also conforms to the German Purity Law of 1516.

製造者とブランドの歴史

Clausthaler is the pioneer and key driver of Non-Alcoholic malt beverages and is exclusively committed to the Non-Alcoholic segment. Brewed in Germany, it is a best-selling product in more than 50 countries.  The brand has won numerous awards. Clausthaler is owned by The Radeberger Gruppe Germany, the largest brewing group in the country through Binding Brauerei.
Binding-Brauerei is a brewery in Frankfurt am Main (DE). The brewery was founded by Conrad Binding in 1870 and since 1953 is included in Dr. Oetker Group. Until 2002, the Oetker Group's beverage division was called Binding- Gruppe, but is now called Radeberger Group.
Binding includes labels such as Binding Adler-Pils, Clausthaler (a near beer), Henninger, and Schöfferhofer. The United States branch of the brewery is located in Norwalk, Connecticut (USA).
During the 1960s and 1970s, Binding expanded considerably through the purchase of smaller breweries in Rhineland-Palatinate, Hesse and northern Baden. As a rule, these breweries were dropped but two of them remain as the Clausthaler and Schöfferhofer brands.
1972 was a year of pioneers: like Clausthaler, a number of breweries were chasing the Holy Grail of non-alcoholic beer in the late 60s and early 70s. At some point, most of them gave up. Clausthaler never did !
" To create something out of the box, you must be in love with the impossible. "
That same year, a small group of brewers had a big idea. They set out to create a great- tasting low-calorie beer. But it took a sales executive to come up with an even bolder vision: why settle for a low-calorie beer when they could create the world’s first tasteful Non- Alcoholic beer?
A team was put together and the challenge began. Other brewers had tried to brew a beer without alcohol before, but the results were invariably undrinkable. Not this time, though. In 1972, Clausthaler started the process that would change the world of beer forever. It was the relentless brewmasters that invented the Controlled Fermentation, they would stay up days on end, through the night, measuring, testing, measuring again, waiting, measuring, waiting until they found their own way of brewing a non-alcoholic that looked and tasted like a good beer should.
For in 1979, the general attitude towards Non-Alcoholic beer was not exactly positive. But the Clausthaler brewmasters had worked too hard to let their innovation go unnoticed. And once again, a spark of genius saved the day. The brewery invented "Prinzenbier,” sold as a delicious new – alcoholic – light beer. Behind the label, “Prinzenbier”, was of course, Clausthaler. Suddenly, bar owners and retailers couldn’t get enough of the hip new brew, and when the ruse was revealed, Clausthaler proved that it was here to stay. The visionary team behind Clausthaler always knew that they would have to make the impossible possible, in advertising just as they did in distribution. The market research confirmed that consumers will only opt for Non-Alcoholic beer if it tastes like a real beer.
“Everything a beer needs”: that was the key.
Behind every great innovation there’s a group of people with a taste for the unattainable. The Clausthaler leadership was aware of the difficult task ahead from the very beginning, but the first decade of pioneering the young brand kept reminding them on a daily basis: brewing a Non-Alcoholic beer that looked and tasted just like real beer was going to be a real challenge.
Luckily for the world of beer today, Clausthaler was led by a team that thrived under pressure. At its helm, Dr. Christian Zürcher had the skill and expertise to steer the brand into the future. Zürcher, Clausthaler’s head of technology, worked closely with brewmaster Rüdiger Gruß to translate Clausthaler’s technological achievement into the brand’s signature taste.
Together with their team they ultimately achieved their vision and created a non-alcoholic brew that looks and tastes like a real, good beer.
With the use of cutting-edge technology, Clausthaler pioneered an innovative method of brewing Non-Alcoholic beer. While the competition tried a different way to brew beer and extract the alcohol after the fact, Clausthaler developed a process where only a negligible amount of alcohol is produced in the first place. In order to give Clausthaler its award-winning taste, the brewmasters add the hops at an advanced stage of the brewing process. This allows for the characteristic aroma of Clausthaler to be optimally released. The resulting taste is full enough to compete with the finest Pilsner. And you don’t need to be a scientist to appreciate that.
Clausthaler has been acknowledged as a truly exceptional non-alcoholic beer since its inception. Hence it’s no surprise that from its launch in 1979 until today, Clausthaler has remained Germany’s most highly awarded Non-Alcoholic beer. The brand is recognized time and again as the best- tasting, highest quality beer in the Non-Alcoholic category, both on a national and an international level. All these awards are a source of pride. But more importantly, they are an inspiration to keep perfecting the quality and taste of the world’s finest Non-Alcoholic beer.
After spending decades perfecting Clausthaler Original into the gold standard of Non- Alcoholic beer that it is today, the brand’s brew masters began to expand the variety of Clausthaler tastes on offer.
As one of few brands in the industry committed entirely to brewing Non-Alcoholic, Clausthaler’s benchmarks are set to satisfy the most discerning palates. Today, Non-Alcoholic beer enthusiasts can already choose from a full range of Non-Alcoholic tastes with the Clausthaler touch, but we’re not done yet. We’ve raised the bar of what Non-Alcoholic beer means, and we will continue to innovate the Clausthaler way.

Cheers to that ! !

Purity Law
The German Purity Law is over 500 years old and has played a significant role in the development of German beer culture. Also known as Reinheitsgebot, the German Purity Law had three goals, to protect beer drinkers from rising prices, to ban the use of wheat, so that more bread could be made, and to prevent unscrupulous brewers from using toxic ingredients as preservatives or flavourings.
Under the law, beer makers could only use three ingredients: barley, hops and water. Since then, the law has been updated and now malted grains, hops, water and yeast may be used in German beer - but nothing else ! !

* Clausthaler non-alcoholic beers are highly endorsed by two important independent consumer-focused magazines specialized in product and service testing. ÖKO-TEST is a German monthly magazine founded in 1985 in Frankfurt and is particularly respected for its authoritative evaluations and reviews. STIFTUNG WARENTEST, on the other hand, is a German institution founded in 1964 in Berlin funded by the federal government and state authorities that tests a wide range of products. Both Magazine are known for their independence and objectivity in product evaluations, and their recommendations often greatly influence consumer purchasing decisions in Germany and Europe.
